Chicken with Creamy Spinach Sauce

So often at the end of the day I am am tired and hungry. I get hangry (hungry angry) when I am at the end of a long day and need something to make quick and easy. This recipe I found on Pinterest and tried it one day and it has been a hit with James and I ever since. I have also forwarded the link to everyone I know as well, it is that good! Ingredients & Tools

Cast Iron Skillet

Chicken - I prefer boneless, skinless chicken breasts but this recipe will work for any type of chicken

Salt & Pepper

All Purpose Flour

Vegetable Oil

Garlic - 3 gloves (chopped) or 3 teaspoons of crushed garlic

White Wine or Water - 1/2 cup

Spinach - fresh or frozen

Chicken Stock - 1 cup

Double Cream - 1 cup

Cheddar Cheese - 1/2 cup or however much you want to put in. I put a lot of cheese on


Instructions

  • Preheat the oven to 200 degrees celsius. Season chicken with salt and pepper and coat with flour. I put the chicken in a ziploc bag and shake.

  • Heat a large cast iron skillet over high heat. Add the oil and swirl it around the pan.

  • Arrange the chicken in a single layer and cook until golden brown on one side, about 4-5 minutes and then turn and cook another 4-5 minutes.

  • Remove the chicken and put on a plate for later. Reduce the heat to medium and add the garlic to the pan. Cook the garlic about 2 minutes and add the white wine or water.

  • Cook until the white wine or water is almost completely reduced and add the spinach and a pinch of salt.

  • Stir and cook until the spinach is wilted. Stir in the chicken stock, cream and cheese and bring to boil. Season with salt and pepper and turn off the heat.

  • Lay the chicken into the pan, coating them in the sauce and place in the preheated oven about 8-10 minutes.

  • Remove the pan from the oven and place chicken on a plate. If sauce isn't thick enough place the pan back on the stove and bring it to a boil until you have the desired thickness.
