Oreo Cookie Brownies
So surprise surprise I like to bake. Since getting my KitchenAid Stand Mixer a couple of weeks ago I use it every other day and today I decided to make Oreo Cookie Brownies for the cast of the play I am in. I enjoy baking so much but I find that if I bake a lot it goes to waste since it is just James and I so why not make a treat for a group of people!

Ingredients & Tools
Saucepan
Stand Mixer
Parchment Paper
Baking Tin
115 g unsalted butter
225 g dark chocolate, coarsely chopped
100 g granulated sugar
2 large eggs, room temperature
1 tsp vanilla extract
90 g all-purpose flour
3 tbsp of cocoa powder
0.25 g teaspoon salt
90 g chocolate chips

Instructions
Break up the chocolate and melt it together with the butter in the saucepan over medium heat while stirring constantly. Remove from the heat and pour into the mixing bowl. Let it cool for 10 minutes.
Preheat the oven to 180 degrees Celsius and line the baking tin with parchment paper leaving an overhang.
Add the sugar to the chocolate mixture and whisk in the Stand Mixer until well incorporated. Add the eggs, one at a time. Whisk in the vanilla extract.
Add the flour, coca powder and gently fold them in, Mix until everything is well mixed and the dry ingredients are wet and no clumps remain. Pour in the chocolate chips.
Spread the batter into the baking tin and sprinkle crushed Oreos on the top.
Bake for 30 minutes or until a toothpick comes out with only a few moist crumbs attached.
Let the brownies cool in the tin on a wire rack to room temperature.
Enjoy with a cup of coffee or tea and share with friends!
